you should get a replacement. not sure if they will ask for it at the interview

Unexpired passport is not required I-485. However, you need a valid (unexpired) ID to enter USCIS buildings. As long as you have a valid driver license, renewing your passport is optional.

regardless of your i485, you should not be in any foreign country with an expired passport. what if something else happens? maybe you have a special condition that prevents you from renewing your passport. if not, your consulate/embassy should be able to renew your passport.

I am planning to renew my passport from embassy but, they told me it will take 2 to 3 month To get my passport in hand also they said, they will take my old passport with them and return it with the new passport. since, my priority date is just current now . what if USCIS schedule my interview while my passport is in renewal process which take 2 to 3 months.

you have to renew your passport otherwise you have big issues even when you get gc if you need to travel you have to validate passport.
