NIW means your self sponsored, you can do whatever you want. even if it’s not in your field. once you have GC nobody cares what you do as long as u pay taxes for it.

After receiving your green card, you have get your SSN updated so you have no limitations and then you can open an LLC.

green cards are all the same.. you don’t have an NIW EB2 greencard, that is the pathway you used to obtain it. yours is exactly the same as a family based one or whatever else. if you have a GC you just go ahead and do whatever you want to do, including starting a business . Resources are online

In my opinion, you need to continue in the field of your proposed endeavor. Remember you filled out an SOC code (in form I-140) stating you will work in this field. Make sure your primary job is in this area. If you abandon it immediately after getting your green card, it could be a problem during naturalization. Do consult an immigration attorney for a legal advice.
