I485j Portability
I would like to port my company to EB3 Unskilled, I already have all the requirements, but I'm afraid my current employer will find out and cancel my current process. If I do the portability, could it take a long time to be approved? I need to start working for my employer in October, but I don't want to leave my state to go there and wait for my process to be approved since it will take a long time as EB3 is retrogressed. I want to know if it's possible to have the portability approved by November and if the portability process is straightforward?

You don’t need to work for your sponsor at all before gc approval. If you meet the portability criteria about pending process time (see portability rules), you can just find a new sponsor and fill out the i-485J form. Make sure the job description is same or similar

@Marwan Yehya Do you think I entered the process with the intention of not working for the company? Circumstances have changed, I’m alone in this country, I want to finish college where I live and be with the people I consider my family. I agreed with the company to work with them as soon as my work permit came out, but with the significant retrogression we’re facing, I don’t know how long I’ll be waiting for my green card. The company I was going to work for is extremely large, they spend more on marketing to recruit Americans for a job position than to hire an immigrant. If the visa bulletin normalizes in this new fiscal year, I don’t intend to switch sponsors.

@Matt B I guess it does not matter if your previous employer figured out you have applied for supplement J unless you have your new employer ready to work with you.
