If I-485 approved and green card in hand, you’re allowed to switch to any job. you’re a free man/woman. The only guidance someone has put out there is to wait 6 month before any job switch to not appear suspicious when trying to naturalize. although I have yet to see a story where someone faced consequences in that case. My personal advice (take it as you will) is to take that new job.
