renew work permit or Writ of Mandamus
my work permit is expires in 180 days and im not sure if i should file for a renewal or i should just sue Uscis for taking so long ? I really cant afford to be loose my job coz of my expired work permit while still waiting for my greencard. which option is better or what are my other options?

You can sue USCIS for a delayed case on your own, you will get a decision within 60 days. Do youtube search to learn more about it, and to get assistance with it "Writ of Mandamus Pro Se"

renew the EAD and they might look at the 485 and approve that instead

you can do both. EAD renewal is free and you get automatic 540days extension so you still keep your job. You can still file a Mandamus but expensive and doesn't really guarantee anything. Just be sure that your case is outside normal processing time before arriving at the conclusion that they are taking too long.
