Unfortunately, that can happen sometimes. USCIS case statuses are not always updated properly even after interviews for I-485 cases, and remain stuck in old statuses for months while the case is still pending internally. It may be worth following up through USCIS, a congressional inquiry, or speaking with an experienced immigration attorney about possible next steps.
