My interview went kind of Ok in Dec 10, 2020. That on Jan 4, 2021, the I-130 was approved. I am concerned on why my i485 status update did not jump straight to Approved too.
I have been married for over 2 years, was on student visa before for about 3 years, clean background check, veteran spouse, stable nice job. I am kinda of freaking out. Anybody else in this situation/step ?

That sounds like an intent to deny notice. And it normally happens after interview. This might be some inconsistent answers during the interview or they just simply want some more paper works. It also can be that they want to schedule you for a second interview, but more likely its an intend to deny. :(

Directed to me, the only topic the IO questioned a lot was if I completed any class on my college since I returned from Brazil - which I just enrolled/transferred to college after completing 3 years of ELS - I said no as I dropped off as my husband was hospitalized for months and later I became (still am) his caregiver and POA. I provided proof for his conditions and hospitalization records and, even my written conversation with the School Immigration agent regarding.
Later on, I requested and was approved for expedite on my EAD due to the same reasons. Hence why we sold our house.
Towards my husband, as he has a terrible memory due to his TBI, he skipped some new jobs since the DoF. Even tho mentioned that he took some months off as we sold our property back in 2019.

I am def suffering by anticipation. Anxiety is killing me, as I was very detailed and organized on my petition. My husband that is holding better than me... Ive even got a lawyer through my work legal assistance insurance to try to calm me down once I know what it is in the letter lol

Its an undue tu ate situation, take a deep breath. There is no point in suffering from something you are not certain about. Don’t listen to the previous comments saying you got a denial when you haven’t received the notice yet. You know the marriage is true and if anything comes up your lawyer will be able to assist with any correction to USCIS desision. For now just wait for the letter, wishing you the best!

UPDATE:
Just got the letter... It is indeed an intent to deny based on some bs
They way they described sound like I went to Brazil and come back 7 days later and magically got married. Forgot to highlight I was already in the US for other 4 years legally and up to date on my F1. I am running after lawyers now to appeal this decision

Im sorry to hear that, the intent to deny is not reasonable since your husband had medical emergency, I recommend you print out all the evidence you have to show them that you drop out ( didn't metain your F1 visa) due to the medical emergency. The IO officer sounds really unreasonable with this matter.

Just a quick update, I had 2 option: Rebuttal or Waiver. I refused to take any guilty (waiver) and send a NOID Response with about 160 pages of evidence. Clearly, I got a lawyer to represent me but, my fast reply was only due to me being organized and keeping records of every little thing.
Hopefully I can share some good news soon 🙏
