Found processing stats that actually match my situation MyCasesHub
The USCIS processing page is just a national average by form.
MyCasesHub has a crowdsourced breakdown that splits it by country, category, and field office with real applicant data (2,000+ cases now), so you can see timing and approval rates for people in your exact situation.
Way closer to my actual case than the official average. Smaller countries still need more data but it's the closest thing I've seen to "how long for someone actually like me.

I paid for the mid tier, which is just a few dollars gives plenty of info - you can even search similar cases to you or view recent approvals to get a idea of what is getting approved.
